Prawn & Avocado Cups

Makes 8 cups

Ingredients

  • 1 packet of uncooked king prawns

  • 1 avocado

  • 2 large tomatoes, finely chopped

  • 1 red onion, finely chopped

  • chilli flakes

  • 1 packet of filo pastry

Method

  • In a frying pan, pour a dash of oil and then add the prawns. Season with chilli flakes.

  • Cook until pink and then set aside to cool.

  • Meanwhile, cut open the avocado and remove the stone.

  • In a bowl, combine the avocado, tomatoes and onion. Season with chilli flakes.

  • Cut the filo pastry into small squares and place into a cupcake tin.

  • Lightly brush the edges of the squares with olive oil.

  • Cook for about 3 minutes or until golden.

  • Spoon your avocado mixture into each cup and top with a king prawn.

  • Garnish with lemon slices and parsley.

  • Enjoy!
