Prawn & Avocado Cups
Makes 8 cups
Ingredients
1 packet of uncooked king prawns
1 avocado
2 large tomatoes, finely chopped
1 red onion, finely chopped
chilli flakes
1 packet of filo pastry
Method
In a frying pan, pour a dash of oil and then add the prawns. Season with chilli flakes.
Cook until pink and then set aside to cool.
Meanwhile, cut open the avocado and remove the stone.
In a bowl, combine the avocado, tomatoes and onion. Season with chilli flakes.
Cut the filo pastry into small squares and place into a cupcake tin.
Lightly brush the edges of the squares with olive oil.
Cook for about 3 minutes or until golden.
Spoon your avocado mixture into each cup and top with a king prawn.
Garnish with lemon slices and parsley.
