Mini Taco Cups

Makes 12 cups

Ingredients

  • 2tsp olive oil

  • 1 large red onion, chopped into small pieces

  • 450g minced beef

  • 2tbsp taco seasoning

  • salt to taste

  • 1 tin of chopped tomatoes, drained

  • 1 packet of filo pastry

  • 150g grated cheddar cheese

  • 100g sour cream

  • 30g sliced tomatoes

  • 30g sliced spring onions

Method

  • Preheat the oven to 180 degrees.

  • Heat the olive oil in a frying pan over a medium heat.

  • Add in the chopped red onion and cook until soft. Then add the minced beef and stir constantly, making sure to separate the meat.

  • Once the beef has browned, pour in the taco seasoning and salt to taste.

  • Stir in the chopped tomatoes.

  • While that is cooking, cut your filo pastry into small squares.

  • Lay two squares on top of each other to make a star shape and place into your cupcake tin.

  • Spoon the meat into each cup and sprinkle with grated cheese.

  • Bake for 5 minutes, or until the edges of the filo pastry are golden.

  • Top with sour cream, spring onions and tomatoes.

  • Enjoy!

*If the meat mixture has a lot of liquid, use a sieve to drain this. It may cause the bottom of your filo pastry to be a bit soggy otherwise
