Mint Chocolate Brownies

Ingredients
Brownies
- 60g butter
- 60g oil
- 120g granulated sugar
- 2 eggs
- 1tsp vanilla
- 1tsp mint extract
- 40g cocoa powder
- 120 plain gluten free flour
- 1/4tsp xanthan gum
- 1/4tsp salt
- 1/4tsp baking powder
Mint Buttercream
- 60g butter softened
- 180g icing sugar
- 1tbsp double cream or milk
- ΒΌtsp mint extract
- a few drops green food colouring
Chocolate Ganache
- 250ml double cream
- 8oz dark chocolate
Method
- Preheat oven to 350 F.
- Grease a medium baking tin.
- Melt the butter in a large microwaveable bowl. Using a whisk, mix in the oil, sugar, eggs, vanilla and mint extract. Beat in the cocoa, flour, salt and baking powder. Pour mixture into the prepared baking tin and bake for 20-25 minutes or until an inserted metal skewer comes out clean. Leave to cool completely.
- To make the mint buttercream, using an electric mixer, mix for 1-2 minutes, beat in the powdered sugar. Pour in the cream/milk until the mixture becomes spreadable and then add the mint extract to your tastes. Spread on top of cooled brownies and refrigerate for 30 minutes.
- For the chocolate ganache, pour the cream into a saucepan and bring to a simmer. Do not let it boil. Add in the chocolate, chopped and whisk until smooth.
- Pour the ganache over the mint layer and refrigerate until set.
