Avocado Pesto

Makes 4 portions

Ingredients

  • 1 large bunch fresh basil
  • 2 ripe avocados
  • 100g walnuts or hemp seeds
  • 2tbsp lemon juice
  • 3 cloves garlic
  • 1/2tsp fine sea salt
  • 100g extra-virgin olive oil
  • black pepper, to taste

Method

  • Remove basil leaves from the stems and put into a food processor, along with the avocado, walnuts, lemon juice, garlic and salt. 
  • Mix until finely chopped. Add the oil bit by bit until the mixture forms a thick paste. 
  • Season with pepper.
