Avocado Pesto
Makes 4 portions
Ingredients
- 1 large bunch fresh basil
- 2 ripe avocados
- 100g walnuts or hemp seeds
- 2tbsp lemon juice
- 3 cloves garlic
- 1/2tsp fine sea salt
- 100g extra-virgin olive oil
- black pepper, to taste
Method
- Remove basil leaves from the stems and put into a food processor, along with the avocado, walnuts, lemon juice, garlic and salt.
- Mix until finely chopped. Add the oil bit by bit until the mixture forms a thick paste.
- Season with pepper.
